Rainbow Protein Crunch Jar

A high-protein mason jar salad built to stay crisp for 5 full days — no wilted greens, just crunch from top to bottom.

Ingredients
  

Dressing (bottom layer)
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper to taste
Layers
  • 1/2 cup roasted chickpeas
  • 1/2 cup cooked quinoa cooled
  • 1/3 cup shredded carrots
  • 1/3 cup shredded red cabbage
  • 2 hard-boiled eggs halved
  • 2 tbsp pumpkin seeds
  • 1 and a half cups baby spinach

Method
 

  1. Whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper directly in the bottom of a wide-mouth mason jar
  2. Add the roasted chickpeas on top of the dressing
  3. Add the quinoa as the next layer.Add the shredded carrots and red cabbag
  4. Add the pumpkin seeds.
  5. Place the hard-boiled egg halves on top, cut-side up.
  6. Top with the baby spinach, pressing down gently.
  7. .Seal the jar and refrigerate for up to 5 days.
  8. To serve, shake well or empty into a bowl and toss.

Notes

Use a wide-mouth quart jar for easy layering and eating. Add eggs whole-halved rather than chopped, and place them close to the top so they hold their shape.
