- Whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper directly in the bottom of a wide-mouth mason jar
- Add the roasted chickpeas on top of the dressing
- Add the quinoa as the next layer.Add the shredded carrots and red cabbag
- Add the pumpkin seeds.
- Place the hard-boiled egg halves on top, cut-side up.
- Top with the baby spinach, pressing down gently.
- .Seal the jar and refrigerate for up to 5 days.
- To serve, shake well or empty into a bowl and toss.
Notes
Use a wide-mouth quart jar for easy layering and eating. Add eggs whole-halved rather than chopped, and place them close to the top so they hold their shape.
